Then pick an oven type: The most common are convection (which uses fans to circulate heated air), double ovens and air-fryers. Consider the size of your space, as well as the number of people in your household (four burners is best for more than two people).

We asked Shimek to help us get down to the gas stove nitty-gritty. These are the key features he suggests you consider when buying a gas stove:

  • BTUs: BTUs (British thermal unit) indicates how hot the burners will get. “An average range has a simmer burner of about 5,000 BTU; two medium burners of around 10,000 BTU, and a large burner of 13,000 BTU or so,” Shimek says. Note: Most burners these days have electric igniters instead of pilot lights. Food can clog the works from time to time and block the igniter spark. Here’s how to fix it.
  • Natural Gas, Propane or Dual-Fuel: Natural gas contains methane, which burns cleaner than most fossil fuels.
